As a bodybuilder or a fitness fanatic, we usually don’t have a lot of time to cook. That is why many of us take one day out of the week to do our meal prep for the entire week. I personally do nearly a two week meal prep day since I am not a huge fan of meal prepping. Once in awhile, however, I like to enjoy something a little different than my normal chicken, brown rice and vegetables that I even eat for breakfast.
This morning I wanted to have an egg omelette, so made a simple concoction that turned our pretty good, so wanted to share it with you guys. It’s very easy to prepare and takes just a few minutes if you have the chicken already cooked, or about 15 minutes if you don’t.
What you will need
- 6 oz. boneless skinless chicken breast (cooked or uncooked)
- 1 cup chopped frozen spinach
- 4 large grade AA eggs
- 2 tablespoond almond milk
- Hot sauce or tabasco sauce
- Salt and pepper (optional)
- Non-fat cooking spray
Thoroughly spray a medium saucepan with a non fat cooking spray and bring to a medium heat. If you are using chicken breast that is not yet cooked, bring to a medium-high heat. Place the chopped chicken in the saucepan, and cook until it’s just starting to brown. Then add in the chopped spinach and continue cooking until spinach is thawed and chicken is brown. If you are using pre-cooked chicken breast, add the cup of chopped spinach in with the chicken.
Combine the four eggs and almond milk in a bowl, and add salt and pepper to taste. Whisk the eggs and milk until they are well blended. Pour the eggs into the chicken and spinach and cook on medium heat until eggs are done. Remove from heat, place in a bowl and top with hot sauce or tabasco sauce, or whatever spicy condiment you prefer.
Voila! You have a delcicious, nutritious high protein breakfast bowl ready in just a few minutes! Enjoy!
